Frozen burritos are a healthy and inexpensive dinner option, but when you make them at home, you know exactly what is in them. That makes them just as healthy as their takeout cousins. And because they’re not made with all the unhealthy ingredients of restaurant burritos, they’re also cheaper to make. The recipe below uses ground turkey, which is much lower in fat than beef or chicken, making for a meal that’s lean, protein-rich, and filling.
I’ve been making these cheap frozen burritos for over a year now and I still like them! But you know what? They are actually slightly more expensive than the ones you can buy in the store. Although these economy burritos only cost about $1.14, you can buy other burritos for about 50 cents. But my homemade frozen burritos taste better, you know exactly what healthy ingredients are in them, and they only have 192 calories!
I like to make a big batch of these burritos so I can freeze them every few months or so. My favorite is the beef and bean burrito. They are also on my monthly shopping list, where I only have to spend $200 for two! You can easily make your own frozen burritos to take to work and save money on lunch. They are delicious on their own or with sour cream and sriracha. Once you get the hang of it, you can add other ingredients such as rice, corn, etc. Of course, you can make these burritos even cheaper by buying less lean beef, but that means more calories. Canned products are also cheaper if you don’t buy organic. How long will these burritos keep in the refrigerator? I honestly have no idea. They are so delicious they haven’t even lived in my house for 2 months. However, you can put them in a freezer bag if you want to keep them longer.

- Put 2 pounds of beef in a pan with about 2 cups of water. Turn the heat to low and continue to mash the pieces with the potato masher until the beef is cooked. (If you stop too soon, they may turn into pieces!) When cooked, drain off the excess fat.
- Season with salt, black pepper, garlic, cumin, chili powder and cayenne pepper. (Cumin and chili powder are the main ingredients). I like spicy food, so I add lots of black pepper, cayenne, and ground red pepper.
- Add a cup of water, then stir in the tomato paste.
- Mix the diced onions and the drained beans.
- Cook for 30 minutes, then allow mixture to cool.
- After cooling, weigh by transferring to another pan or large bowl on a kitchen scale. Take this weight and divide by 32 to determine how much to put in each burrito.
- How to fold a burrito: Put the filling on the bottom half of the tortilla. Fold the bottom of the tortilla over the filling. Fold the pages down. Roll the burrito around it tightly.
- To freeze, wrap burritos in parchment paper or plastic wrap. Mask with painter’s tape and label as needed.
- To reheat : Remove the wrapper from the burrito and microwave for 1 to 2 minutes. Turn the burrito over halfway through the cooking time.
